Mandarins

Mandarins are favoured as a juicy and easy-to-eat citrus treat. Their skin varies in colour from yellow-orange to deep orange, and is usually quite smooth. They vary in size from quite small to almost the size of an orange. Inside, mandarins are divided into small crescent-shaped segments, which pull apart easily. All mandarins share the same sweet and juicy citrus flavour, and are great eaten fresh from store on their own, used in salads and sauces, or cooked in sweet or savoury dishes.
To buy Mandarins should be brightly coloured and glossy. They should feel relatively heavy for their size and not have any discoloured patches on their skin. To store Store mandarins at room temperature, out of direct sunlight, for3 to 5 days. Alternatively, store in the fridge for 1 to 2 weeks. To prepare Simply peel away the skin and enjoy. If using mandarins in salads or cooking, separate segments first and try to remove as much of the white pith as possible. Nutrition Mandarins are an excellent source vitamin C. This vitamin works in the body to help heal wounds, as well as helping to maintain a healthy immune system.

Mandarins add an acute sweet lift to many dishes. Peeled segments contribute an aromatic note to fruit salad and a little finely grated zest adds a scented sharpness to piquant strawberries, especially ones sprinkled with kirsch.

Devine Mandarin and Orange Cake

Preparation: 15 minutes
Cooking: boil oranges for 2 hours, bake cake for 1 hour
Serves: 6-8

150g ground almonds
2 large oranges
6 eggs, beaten
250g white sugar
1 tspn baking powder
1 orange, peeled and segmented (extra)
1 mandarin, peeled and segmented (extra)

Preheat oven to 190ºC and grease a springform tin.
Boil oranges covered in a little water for 2 hours. Allow to cool slightly.
Cut oranges open and remove pips, cut roughly.
Blend oranges and all remaining ingredients together in a food processor.
Pour batter into prepared cake tin. Bake for approximately 1 hour.
Allow to cool in tin before turning out.

Serve with an orange or mandarin segments and plenty of thick cream.
